Study of the influence of the origin, cooperage and toasting in the composition of the barrels and, as a result, the composition of the wine. A control is made of all the different types of barrel used in the wine cellar with a single wine. Analysis after ageing for 12 months and subsequent tasting provides valuable with regard to the final quality of the wines. The study of the composition of the vats over the years of use enables their useful life to be assessed. In collaboration with the Itacyl.
