Study of the oak wood use in making the barrels. Assessment of the suitability of Spanish oak in enology

Objective: A study was made of the composition of the oak wood used in the barrels for Pago de Carraovejas, both the aromatic fraction and the tannins as well as other components originating in the toasting processes. The study includes an assessment of Spanish oak barrels and their suitability for ageing high-quality wines. The conclusion for this final part of the study was that it was very suitable and so it is possible to use Spanish oak to make barrels.
