Objective: Study of the ripening of the grapes depending on the age and orientation of the vineyard and the variety of grapes in the Pago de Carraovejas estate. Study of the ripening of the grapes depending on how this is managed in other vineyards in the Ribera del Duero. The conclusions from the study show how important it is for the vineyard to be correctly oriented in order to achieve correct ripening and for the age to have a lesser effect, providing handling is in accordance with the characteristics of each vine.
