Determination of the optimum harvest time for each type of wine

Objective: To establish a technological ripening index for red groups used to produce wine. The characteristics of different varieties of grapes were studied at the time of harvesting, one before this date and one week after, with a view to studying the features that were contributed to the wine and to choose the most suitable time for harvesting.
